Prepare Vegetable Lo Mein in microwave according to package directions.
Meanwhile, in large skillet set over medium heat, melt butter. Stir in curry paste and garam masala. Cook, stirring occasionally, for 1 to 2 minutes or until fragrant. Stir in tomato paste. Cook for 1 minute. Stir in coconut milk and bring to a boil. Stir in chicken. Cook, stirring occasionally, for 3 to 5 minutes or until heated through.
Stir in lo mein and peas; bring to a simmer. Cook, stirring occasionally, for 2 to 3 minutes or until flavors are married, peas are heated through and sauce has thickened.
Garnish with cilantro and serve with lime.
Tips: Substitute peas with leftover veggies, such as chopped potatoes, cauliflower or green beans.
Stir in 2 tbsp almond butter or peanut butter with the tomato paste in Step 2 for added richness and flavor.
